First, put a small amount of clarified butter* in the pan and heat it until it starts to bubble. Then slide the filet skin side up into the pan. (This sliding action will keep it from sticking, but be careful not to splash grease onto the burner as it can flame up.) Starting with the skin side up will accomplish two things. It will keep the fish from curling and it will allow you to cook the side that will be presented to your guest to a perfect golden brown. Once you get the beautiful color exactly like you want it on the flesh side, flip it and continue cooking until the fish is done. You don't care so much about what the underside looks like because no one will see it. Also, now the flesh side is up. If you gently pull the top of the fish with the tines of a fork, it will flake when it's perfectly done. Before that moment, it will stay firm. When the fish flakes, take it immediately off the fire and serve it. Within the next few minutes, carry-over cooking will continue to bdiamondrings-20" title="ring">ring the temperature up.

Carry-over cooking means that when you remove a food product from a hot pan, it continues to cook. Generally, this is five or ten minutes and five degrees on the thermometer. That's why it's ok to let food rest before you cut it. Not only will it stay hot, the protein will continue to coagulate (seize up) and this will keep the juices from all running out when you cut it. With fish, carry-over cooking is especially important because fish is fragile in the sense that the window before it's overcooked is very small. Take it away from the heat just before you think it is done.

After cooking a few filets in this manner, you will have a good sense of how long it takes for the fish to get done. Notice that you can watch the side of the fish as it cooks and that as it cooks through it turns a more solid white (or pink, as the case may be). Then you can progress to baking fish. Brush a little oil on top, sprinkle it with salt and pepper. Then position the fish in the pan so you can see the side through the oven door and watch the color as you bake or broil it. Next try baking then broiling a fish filet (without the skin) and you will find that it's a lot easier because you understand how the fish cooks.

A popular theme for weddings at the moment is vintage. With so many of us feeling the effect of the 'credit crunch' having a vintage theme wedding can be both stylish and a great money saver. Here are some ideas for wedding flowers and decorations that will suit this theme.

The most popular vintage wedding flower colors are lilac, white and pale pink. This can give a lovely subtle tone to your decorations. Good choices of flowers include hydrangeas, lisianthus, roses, stocks and freesias. These can be used on their own or in combination with each other.

If you want to have a more romantic feel to your reception, you could opt for antique candelabras or candleholders. These can give a wonderful light and atmosphere to the evening. One of the advantages of having a vintage wedding is that if all the containers don't match - it doesn't really matter.

Vintage bridal bouquets should have a natural look to them. Posy styles are popular amongst brides with this theme. You could also spend some time looking through vintage photographs of brides, to get ideas on what styles of bouquet used to be used.

Once you have decided on your flowers you can finish the wedding decorations with items that coordinate with the colors. For instance you can make some handmade bunting or reception table runners. These can make the ideal finishing touch to a vintage wedding and they're not expensive.

Using Velvet in Your Wedding

Do remember the episode of Seinfeld where George confessed that he had always wanted to be draped in velvet? If you found yourself nodding in agreement with him, then indulge your love of velvet when designing your wedding. One caveat, though: velvet is best reserved for winter weddings.

When looking at velvet, it is important to know about the different varieties. The finest velvet is woven in Germany. For bridal gowns, a silk velvet (which is usually a silk and rayon blend) is going to be the best choice, because it has a wonderfully fluid drape. Acetate velvets are less expensive (and sometimes have a weird sheen), but they work for secondary pieces such as trims and ribbons, or perhaps for a flower girl dress. Cotton velvet, or velveteen, is much stiffer than silk velvet, and works well for designs that need to hold a shape, such as the groom's vest.

Anytime that you use velvet, you will instantly increase the luxuriousness of something. That is why velvet is a scrumptious addition to any winter wedding. It makes a stunning bridal gown. Picture a long sleeved winter white dress, possibly with fur cuffs. Pure luxury!

A bridal gown that spectacular deserves equally fine wedding jewelry. Because velvet is a heavier fabric, your accessories should have a visual weight to them as well. Ladies and Gentlemen, I'd planned to speak to you tonight to report on the state of the Union, but the events of earlier today have led me to change those plans. Today is a day for mourning and remembering. Nancy and I are pained to the core by the tragedy of the shuttle Challenger. We know we share this pain with all of the people of our country. This is truly a national loss. Nineteen years ago, almost to the day, we lost three astronauts in a terrible accident on the ground. But we've never lost an astronaut in flight. We've never had a tragedy like this. And perhaps we've forgotten the courage it took for the crew of the shuttle. But they, the Challenger Seven, were aware of the dangers, but overcame them and did their jobs brilliantly. We mourn seven heroes: Michael Smith, Dick Scobee, Judith Resnik, Ronald mcnair, Ellison Onizuka, Gregory Jarvis, and Christa mcauliffe. We mourn their loss as a nation together. For the families of the seven, we cannot bear, as you do, the full impact of this tragedy. But we feel the loss, and we're thinking about you so very much. Your loved ones were daring and brave, and they had that special grace, that special spirit that says, "Give me a challenge, and I'll meet it with joy."
